Every day, I try to create something different for lunch. It is not done on purpose but rather in a playful manner. I am trying to discover the creative side of myself. I am always very serious about everything as many of my friends know me but recently, I am having a lot of fun in my new playground, the kitchen.
The recipe for the beetroot patty was in my earlier post.
For the mash potato, it’s pretty easy. My version of the mash potato is not so fattening but it’s not as creamy.
2 medium potatoes
1 tsp of freshly grounded black pepper
1/4 cup coconut milk
Salt to taste
1. Boil the potatoes. Peel the skin and mash them.
2. Add the coconut milk and mix with the potatoes.
3. Add black pepper and salt.
4. Serve it as a side or eat it on its own.
