Lemongrass Turmeric Quinoa

Eating healthy doesn’t require a lot of work. At least for me, I always try to aim for food that is simple and easy to prepare but of course there are days where I feel like doing more but that aside, I think all of us need to take care of our own health in order to do good to whatever you are doing.

Ingredients:

1/2 cup of white quinoa soaked at least half an hour before hand

1/4 cup carrot julienned

1/4 firm tofu cubed

1/4 cup shredded cabbage

1 tsp lemongrass turmeric paste (bought or blended on your own.)

Salt to taste

 

Methods:

  1. Rinsed the quinoa and cook it with 1 cup of water and a pinch of salt.
  2. In a heated wok, fry the tofu until lightly brown and place aside.
  3. Saute the carrots and cabbage, once soften, add in the salt and lemongrass turmeric paste.
  4. After that, add in the tofu and quinoa. Mix them up well.
