Simple Quinoa Pilaf

When you are not sure what to cook, a simple and easy to prepare meal will always be a delight. It is similar to fried rice except that it is carbo free because quinoa is used in replacement to rice.


1/3 cup white and red quinoa mixed (soaked at least 30 mins before cooking)

1 carrot julienne

1/3 cup cabbage chopped

1/2 firm tofu cubed

2 tbsp of coconut oil


  1. Rinsed the quinoa and cooked it with 2/3 cup of water.
  2. In a heated wok, fry the tofu until lightly brown and place aside.
  3. Saute the carrots and cabbage, once soften, add in the  cooked quinoa and tofu. Mix them up well.

The quinoa pilaf is ready. Enjoy a simple home cooked lunch. You can have it for dinner too.
