When you are not sure what to cook, a simple and easy to prepare meal will always be a delight. It is similar to fried rice except that it is carbo free because quinoa is used in replacement to rice.
Ingredients:
1/3 cup white and red quinoa mixed (soaked at least 30 mins before cooking)
1 carrot julienne
1/3 cup cabbage chopped
1/2 firm tofu cubed
2 tbsp of coconut oil
Methods:
- Rinsed the quinoa and cooked it with 2/3 cup of water.
- In a heated wok, fry the tofu until lightly brown and place aside.
- Saute the carrots and cabbage, once soften, add in the cooked quinoa and tofu. Mix them up well.
The quinoa pilaf is ready. Enjoy a simple home cooked lunch. You can have it for dinner too.
